Who’s afraid of bhut jolokia?

It’s is called ghost [bhut] pepper for a reason. It’s hot! Super hot! So hot that you can’t handle it. Trust me. You have been warned.

So, if your good friend from Assam eagerly brings the bhut as gift for you from back home, you’re in a pickle. And that’s  exactly what you make with it.

Here’s what you need to pickle bhut jolokia:

250 ghost chili peppers (bhut jolokia)
1 tsp fenugreek seeds
2 tbsp yellow crushed mustard seeds
1/2 tsp turmeric powder
1/2 tbsp fennel seeds/sauf crushed
1 tbsp salt
1/4 cup lemon juice
1/2cup mustard oil
1 dry glass jar

First things first, put on your gloves and keep them on till the bhut is trapped in a glass jar.

Now, slash the chilies into small pieces.  Mix all the spices and salt together. Add to the chilies.

Transfer into a clean and dry airtight, glass jar. Add freshly squeezed lemon juice and oil.
Shut the lid of the glass jar tightly. Shake it .

That’s it. Try and taste after 10 days. Oh, did I tell you it’s hot!
